Chiang Mai's curry noodle soup — the real version. Soft noodles, crisp noodles, cracked coconut cream, and a paste you pound yourself. Researched from Thai-language chef sources and translated; sources cited below.
Khao soi is Chiang Mai's signature dish. It arrived in Lanna with Chinese-Muslim traders from Yunnan — the Chin Haw — who carried it along the old caravan routes. Northern cooks rebuilt it with local ingredients: fresh turmeric, makrut lime, coconut cream — until it became something entirely its own. The beef version belongs to the Muslim khao soi tradition: shops like Khao Soi Pa Pai (Wat Ket, 40+ years) and the six-decade legend Khao Soi Samer Jai in Fa Ham still serve it. In 2022, TasteAtlas ranked khao soi the #1 soup in the world.
One bowl contains five textures: soft noodle, crisp noodle, tender chicken, silky broth, sharp pickle. That's the point of the dish — and it's the part most western versions drop.

We don't hide the disagreements — we document them. These are the genuine variations between the Thai sources this recipe is built from:
Turmeric: fresh root (R-HAAN) vs powder (some home cooks) — either works.
Ginger vs galangal: R-HAAN uses ginger in the paste; some northern cooks use galangal. Both exist in Chiang Mai.
Cardamom: green pods (SGE), black cardamom (Kapook), or none (many home cooks).
Dark soy: SGE adds it for colour; R-HAAN seasons with fish sauce and palm sugar only.
Muslim/beef version: swaps curry powder for masala and often adds milk — the khao soi Islam tradition.
