The jungle curry — no coconut milk, no mercy. Chilli-hot water broth loaded with vegetables and wild herbs, finished with green peppercorns.
แกงป่า — "jungle curry" — is the Thai curry made for the forest, where coconuts don't grow. Where every other Thai curry rounds itself with coconut milk, gaeng pa runs on water and the paste alone, so the heat arrives undiluted. The Zabwer source puts the target plainly: "it has to be hot enough that you eat it wiping sweat — that's when it's good. If you don't like heat, reduce the chillies."
The Aroifin method is a lesson in ordering: the paste is stirred into boiling water, the chicken goes in to cook through, then the vegetables join in order of their cooking time — pumpkin and pea aubergines first, baby corn, bamboo and long beans after — so everything lands tender at the same moment. Seasoning is just fish sauce and a little palm sugar; the dish doesn't want balance, it wants heat.
The finish is the dish's real signature: green peppercorns on the stem, torn kaffir lime leaves, fingerroot and holy basil go in last, one stir, off the heat — the source's rule — so the fresh aromatics hit the nose before the chilli hits the tongue. Served over rice, or over khanom jeen rice noodles for the central-Thai way.

The Zabwer version goes heavier on the vegetables — a full mixed-vegetable jungle curry — and skips nothing on the chilli. Serve with hot jasmine rice or khanom jeen.
The paste. Aroifin builds from 2 tablespoons of ready gaeng pa paste; Phol Food Mafia pounds from scratch — 9 dried chillies, shrimp paste, kaffir zest and the usual roots. The water-based broth depends entirely on the paste, so the paste decides the curry.
To fry the paste or not. The standard method fries the paste in oil before the water goes in; the Blockdit grandmother's version (รสมือย่า) never fries it — no oil slick on the surface, "but it's still ferociously hot." Two schools of the same curry.
To season or not. Phol's recipe is adapted from a แม่บ้านบุษราคัม school recipe whose original version doesn't season with fish sauce and sugar at all — he added the sweet-salt balance himself. The heritage version trusts the paste and shrimp paste alone.
How many vegetables. Aroifin's is a restrained set; Zabwer's is the full mixed-vegetable version — "a curry full of fibre" — with whatever the market has. Both are gaeng pa; the forest decides the vegetables.
Chicken cut. Aroifin specifies thigh — "tenderer than breast, and it doesn't dry out when simmered." The home recipes use whatever is in the fridge.
How hot. Zabwer demands sweat-wiping heat and offers the chilli reduction as the only concession. The curry's identity is the burn.
